KYNETON CAESAR SALAD DRESSING

A rich, classic Caesar dressing made with anchovy, parmesan, and Kyneton Extra Virgin Olive Oil.
Creamy, savoury, and perfectly balanced.

Ingredients

  • 2 cloves of Garlic, peeled and crushed
  • 2 each Anchovy fillets
  • 2 each Egg yolks
  • 3 tblspns balsamic vinegar
  • 200ml Kyneton Extra Virgin Olive Oil
  • 100gms Parmesan cheese,finely grated
  • Salt and freshly milled pepper

Instructions

  • Put the eggs into a mixer with all the ingredients except the oil
  • Turn the mixer on and pour the Kyneton Extra Virgin Olive Oil in slowly to form an emulsion
  • Season to taste

Serving Tip

Toss through crisp cos lettuce and top with extra parmesan and croutons. Also works well as a dip for roasted vegetables or grilled chicken.
